Homemade veg noodles manchurian

Indian Chinese cuisine also commonly known as Indo Chinese cuisine is a distinct type of culinary style which is prepared by combining Indian vegetables and spices with Chinese sauces. In India, Chinese cuisines always means noodles manchurian or sweet corns or hot chilli potatoes. But noodles manchurian is the most famous and most loved Chinese street cuisine in India. It is loved by wide range of population all over India of all ages. Why is it so loved? Because of its spicy Indian taste with tangy Chinese sauces taste which gives it a mix of spicy sour flavour.

Noodles manchurian was basically original in China and also it is the staple food of China. But over the time, it has also been loved widely all over the world because of which it has grown as one of the most popular cuisines. It is also counted as one among the famous street foods of India. Now the Indian version of the Chinese cuisine is so famous that everyone wants to have it at home anytime. But for making restaurant like noodles manchurian today I am going to share recipe on the same.

HOMEMADE NOODLES MANCHURIAN:

For veg noodles:

For veg manchurian:

Preparation time: 15 mins 

Cook time: 20 mins 

Total time: 35 mins 

INGREDIENTS:

For veg noodles:

  • 300 grams noodles
  • 1 tablespoon of sesame oil
  • 1 tablespoon of vegetable oil
  • 2 teaspoons of minced garlic
  • 1 teaspoon of minced ginger
  • 1 green chili, finely sliced
  • 1 stalk of celery, chopped
  • 1 medium sized red onion 100 grams, sliced
  • 1 large sized carrot 100 grams, sliced
  • 1 large sized red pepper 200 grams, sliced, can also use mix of green and red
  • 3 chopped green onion
  • Use more chopped onions for garnishing 
  • 2.5 tablespoons of soy sauce
  • 1 tablespoon of rice white vinegar
  • 1 teapoon of hot sauce like sriracha
  • 1/2 teaspoon of sugar (optional)
  • 1/4 teaspoon of black pepper powder
  • Salt as per your taste
  • Pinch of white pepper powder

For veg manchurian:

For manchurian balls:

  • 1 grated carrot
  • 5 tablespoons of shredded cabbage
  • 5 tablespoons of chopped spring onion
  • 1/2 chopped onion
  • 1/2 teaspoon of ginger garlic paste
  • 1 teaspoon of chilli sauce
  • 1/2 teaspoon of salt
  • 2 tablespoons of all purpose flour (maida)
  • 2 tablespoons of cornflour
  • oil for frying 

For gravy:

  • 2 tablespoons of oil
  • 1 inch finely chopped ginger
  • 3 clove finely chopped garlic
  • 1 slit chilli
  • 4 tablespoons of chopped spring onion
  • 1/2 chopped onion
  • 1/2 sliced capsicum
  • 2 tablespoons of vinegar
  • 2 tablespoons of soy sauce
  • 1 teaspoon of chilli sauce
  • 2 tablespoons of tomato sauce
  • 1/2 teaspoon of pepper powder
  • 1/4 teaspoon of salt
  • 1+1/4 cups of water 

For slurry:

  • 2 teaspoons of cornflour
  • 1/4 cups of water

STEPS TO PREPARE:

For veg noodles:

1. First chop all the above mentioned vegetables before starting to make the noodles.

2. Then boil the noodles as per the instructions on the packing. Then drain water from the noodles and wash the noodles under cold water.

3. Then add 1/2 tablespoon of vegetable oil to the noodles and toss the noodles so that the noodles get slightly coated with the oil and don’t stick to each other. Then Set it aside.

4. Now take a wok and heat 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil on medium-flame heat. Once the oil turns hot, then add the minced garlic and ginger, sliced green chili and chopped celery to the oil.

5. Now saute all the ingredients for a few minutes until the ginger garlic starts to turning slightly brownish in colour.

6. Then add the sliced onions and again saute for a minute or two until the sides of the onion starts turning light reddish brown.

7. Now add in the sliced carrots, bell pepper, green onion in the wok and cook for 1 minute on high flame. Make sure that the veggies should remain crunchy.

8. Now set the veggies to the side of the wok and lower the flame. Then add soy sauce, rice vinegar, hot sauce (like sriracha) and sugar (optional).

9. Then toss all the veggies to mix it well with the sauce. Add black pepper, salt and white pepper to the veggies and again mix it well.

10. Now stir the boiled noodles in the veggies. Use a pair of tongs to mix it well so that the noodles are perfectly coated with the sauce.

11. Then toss the noodles well to combine all the ingredients perfectly. Then garnish it with spring onions. No your veg noodles is ready to serve.

For veg manchurian:

1. first take a large bowl then add 1 grated carrot, 5 tablespoons of shredded cabbage, 2 tablespoons of chopped spring onion, 1/2 chopped onion and 1/2 teaspoon of ginger garlic paste. Also add 1 teaspoon of chilli sauce and 1/2 teaspoon of salt.

2. Mix all the ingredients well making sure that everything is well combined. Then add 2 tablespoons of all purpose flour (maida), 2 tablespoons of cornflour and again mix the ingredients well.

3. Now form a soft dough. Add more all purpose flour (maida) if required.

4. Then prepare small sized balls from the dough. Now deep fry in a wok with hot oil keeping the flame on medium.

5. Stir the manchurian balls occasionally, until the balls turn reddish brown. Make sure that the manchurian balls are completely dipped in the oil. 

6. Then drain off the excess oil from manchurian balls and keep the balls prepared aside.

7. Now in a large wok, heat 2 tablespoons of oil and saute 1 inch chopped ginger, 3 clove chopped garlic, 1 slit chilli and 2 tablespoons of chopped spring onion.

8. Then add 1/2 chopped onion and stir fry on high flame. Also add 1/2 chopped capsicum and again stir fry until it turns slightly shrinked.

9. Now add 2 tablespoons of vinegar, 2 tablespoons of soy sauce, 1 teaspoon of chilli sauce, 2 tablespoons of tomato sauce, 1/2 teaspoon of pepper powder and 1/4 teaspoon of salt.

10. Again stir fry all the ingredients making sure that all the sauces are perfectly mixed. Then add in 1+ 1/4 cups of water and boil it on medium flame for few minutes.

11. Then in a small bowl take 2 teaspoons of cornflour and 1/4 cup water. Then mix them together to form a slurry. Make sure that the slurry prepared has no lumps.

12. Now pour in the prepared cornflour slurry and mix well. Continue to boil the gravy until it turns thick and slightly glossy.

13. Then add in the prepared fried veg manchurian balls, 2 tablespoons of chopped spring onion and again mix well.

14. Now your manchurian is ready to serve.

Now your veg noodles manchurian is ready to serve. Take a bowl and fill it with prepared veg noodles. Then top the noodles bowl with prepared veg gravy manchurian and now veg noodles manchurian is ready to enjoy. Isn’t it yum. Now I can’t wait anymore to have such mouthwatering delicious food.
