Homemade Mumbai style pav bhaji recipe

Pav bhaji is a Maharashtrian fast food cuisine which originated from Mumbai Cuisines. The dish was originally discovered in a textile mill in Mumbai in the 1850s where the mill workers used to have short lunch breaks which used to be too less time for a full meal. With time, this dish also evolved and found its way into restaurants through Udupi Restaurant. Pav Bhaji is native cuisine to Mumbai, but nowadays it is a well-known and most loved street food in most of the cities in India, especially in the parts of Central and western Indian states such as Gujarat and Karnataka. Pav bhaji is basically a lunch time cuisine, but people love to have it as a meal and also as an evening snack because it is healthy. In the dish Pav bhaji,  PAV means “bread”, and BHAJI means the mashed mixture of all vegetables in a spicy gravy. That’s why pav bhaji is one of the most favorite food for me and my family because it is both healthy and tasty. My mum has been making this dish for us since my teens and even today my mum make pavbhaji often at home for us. So, now I am going to share with you how to make this dish step by step at home like market. For this dish preparation time is 10 minutes and cooking time is 30 minutes. So, to make this delicious dish, it takes about an hour. So let’s begin with the recipe 

INGREDIENTS:

FOR BHAJI:

  • 1 tablespoon + 1 tablespoon butter
  • 3 to mato, finely chopped
  • ¼ cup peas / matar
  • ½ capsicum, finely chopped
  • 2 potato, boiled & mashed
  • 1 teaspoon of salt
  • 1 teaspoon + ¼ teaspoon kashmiri red chilli powder / lal mirch powder
  • ¼ tsp turmeric / haldi
  • 1 teaspoon + ½ teaspoon pav bhaji masala
  • 1 teaspoon + 1 teaspoon kasuri methi / dry fenugreek leaves
  • 2 tablespoon + 1 tablespoon coriander leaves, finely chop ped
  • 1 teaspoon ginger garlic paste
  • 1 onion, finely chopped
  • ½ lemon juice
  • 3 drops red food colour, optional
  • water to adjust consistency

FOR PAV:

  • 8 pav / bread roll
  • 4 teaspoons of butter
  • ½ teaspoon of kashmiri red chilli powder / lal mirch powder
  • ½ teaspoon of pav bhaji masala
  • 4 teaspoons of coriander leaves, finely chopped.

STEPS TO PREPARE:

1. First, take a large wok ( kadhai),  heat 1 tablespoon of butter and add 3 tomatoes, ¼ cup peas, ½ capsicum, 2 boiled potato and ½ teaspoon of salt. Saute the mixture for 2 minutes.

2. Then add half cup of water and again mix it well and then saute it again.

3. Cover the wok with lid and boil the ingredients for 10 minutes.

4. Mash the vegetables properly making sure that there are no lumps.

5. Now add 1 teaspoon of chilli powder, ¼ teaspoon turmeric, 1 teaspoon pav bhaji masala, 1 teaspoon kasuri methi and 2 tablespoons of coriander leaves.

6. Then saute the mixture for a minute making sure all the spices are cooked well and mixed well with the mashed veggies 

7. Now stick the prepared mashed vegetable mixture to sides of the pan and create space at the centre of wok. 

8. Now heat 1 tablespoon of butter and add ¼ teaspoon of chilli powder, ½ teaspoon of pav bhaji masala, 1 teaspoon of kasuri methi.

9. Then add 1 tablespoon of chopped coriander leaves, 1 tablespoon of ginger garlic paste, 1 chopped onion and 1 teaspoon of lemon juice.

10. Saute all the mixture well making sure the chopped onions are cooked well.

11. Then add ½ cup of water or as required for adjusting bhaji thickness.

12. Now boil and mash the mixture again for 5 minutes till the bhaji turns smooth and silky in texture with consistent thickness.

13. Now it’s time to prepare the pav by heating ½ teaspoon butter, then add a pinch of chilli powder, pav bhaji masala and 1 teaspoon of chopped  coriander leaves. Then mix all the ingredients well.

14. Now slit 2 pav from the centre and roast with spiced butter.

15. Roast both the sides of pav till they turn slightly warm and brownish red.

16. Finally, your pav bhaji is ready to serve. Serve it with some chopped onions, chopped coriander, lemon and dollop of butter.
